How can I change or eliminate my e-mail address, if it doesn't say 'delete' next to it?

Why?

You can only delete an email unless you have replaced it with a new, unless you actually want to close your account.

How can I update an e-mail address for a relative?

Julia, you can not change an email address for a relative that has claimed their profile. Only they can change their email address.
