What is the source for them being his parents?

Edward Fisher was born in 1751 in the rural area of Sedgley, Staffordshire, England. It is believed, but unconfirmed, that his father was also named Edward who was born in 1726 in nearby Tipton, Staffordshire. Edward's mother was Mary, born in 1720.

Edward was christened at the church of St Martin's, Tipton on 23 April 1751.
