I would like to know if the Katzenelkenbogen were Kohanim or Leviim or Israel.

I do not believe so.
I did not see a reference to them being Leviim.
And KATZENELLENBOGEN has nothing to do with Katz and evertthing to do with a region in Germany.

I know a rabbi from the Katzenlenbogen family and he writes his last name: Halevi Katzenlenbogen

The main line of the Katzenellenbogen / Katzenellenpogen family are Israel.

I am also a descendant of:

And he has, in my estimation, many thousands of descendants living today.

But, I would love to know where the information about Rabbi Moshe of Ellenbogen comes from, does anyone have a reference about his existence...

In all the information accessible to me, I could not find verification of his existence

Rabbi Shaul Whal had a son named Moshe Meir, but Rabbi Moshe of Ellenbogen (the subject of the discussion here) is an ancestor of Shaul Whal

Linda Goldenstein what Haim is saying, is that these family trees you see on MyHeritage and also here with a big asterisk, are "speculative" family trees that are mostly base on propagated errors, and don't really have any substantiation with documented evidence.
The Rabbi Moshe we're talking about here has no evidence of existence except for legend.
Sometimes there is written evidence, not all old documents are digitized, so there is always a chance someone knows something we don't. If you come across something substantial, please follow up.

The katzenellenberger in Padua and Venice also stories.

I will try to refine my words:
all the information up to Rabbi Yitzchak (including) - the father of the Maharam of Padua is certain information and is based on very many sources

On the other hand, I did not see in any source accessible to me that Yitzchak's father was Rabbi Moshe of Ellenbogen, and I searched a lot to try and continue the family tree as far back as possible
