I have a few older relatives, which would like to have their DNA tests done, but they do not have email addresses or GENI accounts. What is the proper way to do their DNA tests? I assume I can just do the FamilyTreeDNA test for them, make "fake" email addresses and Geni accounts for their entries on my family tree, and then associate the tests that way. Is this the best method?

No,

As long as you are a manager of their Geni profile, you can link a ftDNA account to the profile. Visit their profile as a manager and view the DNA tab. There will be a button to "Select a DNA test".
Pro Tip: Log out of any ftDNA account before attempting to link.

Make sure you order each of them at FTDNA as a separate Kit (one person - one Kit Number). Make sure they each fill in and sign their own permission slips.

On FTDNA - can use the same e-mail for multiple accounts, you can order the Kit to be sent directly to the other person - or order it sent to their name (or TBD) care of you at your address. At FTDNA it is fine to manage accounts of other people. - since they do not have e-mail, for FTDNA use your e-mail for person ordering and person receiving the Kit
