Curious if anyone knows about the disparity of surnames among these three. Father = Weshales, Mother = de Dennington, Daughter = Malyn.

There's no real disparity, for them at least. Since women did not take their husbands' names, the wife is retaining hers. Since modern users aren't familiar with that, the daughter has been give her husband's last name.
Oh, and the Le Chaucer on the husband's last name means "shoemaker."
