I listed February 14, 1869 as his date of birth based on a couple of documents. The 1900 census lists his month and year of birth as February 1869 and his age as 31. With the census being done in June, the age lines up with the month and year. His marriage license list his age as 26 on January 31st of 1896 which lines up with a Feb 1869 birth. The conflict is with his headstone which lists his year of birth as 1867. The year of birth for Antonina seems to be incorrect on the same stone. The website www.findeagrave.com has a listing for Maciej Jaskiewicz and lists his date of birth as Feb, 14th 1867 and shows a picture of the headstone. Absent any further documentation, I think the 1869 is the correct year of birth. I don't know where findagrave got the14th of Feb but I went with that since that's the only day found.
