Forename Hugues OR Hugo OR Hugh

Hugues if you are spelling it in Franch (https://books.google.com/books?id=sLXTLDrjeBkC&pg=PA24&dq=i...)

Hugo is an acceptable alternative, and comes from the Latin, so is how he is referred to in charters.

Hugh is the English.

Hard to say what the most original is. Since spelling is irrelevant at this time. The Hugh isn't used, but both Hugo and Hughes make sense.

I would put Hughes in the display, and Hugo in the alternate language field.
