How do I add/remove dna from a person in my tree?

Depends on where they tested. To link: If they tested at FTDNA, and you have the account password, just hit the relevant link on their DNA tab.

It's best if you log out of FTDNA first - less chance of confusion about which kit you're trying to link to.
