I believe the actual date is 12/26/1478 but an unsure.

Done. That must have been an old LDS file upload - picking up a field, such as "date validated," and loading it into the marriage field.

About time it was corrected!

The profile overview notes indicate:

" A settlement for the marriage Sir Edmund Carew, Baron Carew and Katherine Huddersfield was made on 26 December 1478 (citations)" so the date you had seems valid. It's likely not the actual wedding date & we can be pretty sure they didn't honeymoon in Utah. :)
